Golden Barbecue Chicken Skewer

Chicken on skewers, marinated in Ken's Lemon Vinaigrette and cooked over an open grill. Served over couscous.


8 oz Boneless chicken breast cut into 4 pieces

1 ea 2" chunks of red bell pepper, green bell pepper & yellow bell pepper

3 ea 2" chunks each of red onion & yellow onion

1 8" bamboo skewer

4 oz Brown butter sautéed couscous with chopped parsley

3 oz Ken's Lemon Vinaigrette

Sweet Baby Ray's Golden Barbecue Sauce


1. Skewer chicken and vegetables as shown in picture.

2. Marinate chicken skewer in Ken's Lemon Vinaigrette for at least 1 hour.

3. Grill, skewer and lather with Sweet Baby Ray's Golden Brown Barbecue sauce, serve on top of couscous.
