Hot Barbecue Smoked Chicken Salad

Ingredients

  • 16 fl oz Smoked roasted chicken, blended
  • 2 fl oz Celery, chopped
  • 2 fl oz Bacon, chopped
  • 2 fl oz Smokehouse almonds
  • 2 fl oz Pepper-jack cheese
  • 2 tbsp Onions, grilled, chopped
  • 1 tbsp Chipotle peppers, seeded, diced small
  • 2 tbsp Hot Barbecue and Wing Sauce (SJ5178HA)
  • 2 tbsp Southern Style Mayonnaise (KE5163)
  • 2 each Avocado, ripe, halved, seeded
  • 1 tbsp Sour cream
  • 4 tbsp Crispy tortilla strips

Directions

  1. Place all chicken salad mix ingredients in a large mixing bowl and blend mixture until combined. Label, date, and refrigerate until needed.
  2. Cut two ripe avocados in halve and remove the seed. Fill each avocado half with four fluid ounces chicken salad mix.
  3. Top with a one tablespoon dollop of sour cream and sprinkle with one tablespoon of tortilla strips. Serve.
