Huli Huli Chicken With Pineapple Ginger Citrus Mojo

Marinated chicken with Pineapple Ginger Citrus Mojo Sauce and grilled, served with fresh grilled pineapple slices, steamed rice and Tropical Fruit Salad with Ken’s Poppy Seed Dressing.


1 Whole chicken, quartered

2 Pineapple rings, Sliced & grilled

3 oz Steamed rice

3 oz Tropical fruit salad with Ken's Poppy Seed Dressing, *see recipe in sides


24 fl oz *Pineapple Ginger Citrus Mojo, **Ingredients Below**

1 cup pineapple, medium dice

1 tbsp ginger, freshly chopped

1 cup Sweet Baby Ray's Citrus Garlic Mojo Sauce


1. Marinate chicken overnight with Pineapple Ginger Citrus Mojo.

2. Grill slowly on low grill on all sides until internal temperature is 165°F for 15 seconds.

3. Grill fresh pineapple slices and remove chicken and pineapple to center of plate on top of a bed of steamed rice.

4. Serve with Tropical Fruit Salad.
