Mojo Grilled Red Snapper

Marinated grilled grouper filet brushed with Orange Grapefruit Citrus Mojo on a bed of Herb Lemon Cauliflower Rice with Grilled Creole Corn on the Cob.

Ingredients

1 Red Snapper fillet, 8 oz piece

sprinkle Salt & pepper seasoning

4 fl oz Orange Grapefruit Citrus Mojo, *see recipe

sprinkle Tajin Classic Seasoning

1 tsp Cilantro, Freshly chopped

3 Grilled Creole Corn on the Cob, *see recipe

4 oz Herb Lemon Cauliflower Rice, *see recipe

Directions

1. Marinate Red Snapper fillet in 3 fluid ounces of Orange Grapefruit Citrus Mojo overnight.

2. Remove fish from marinate and season with salt and pepper blend.

3. Grill until internal temperature is 145 °F.

4. Remove from grill and place over bed of Herb Lemon Cauliflower Rice.

5. Brush fish with remaining Orange Grapefruit Citrus Mojo.

6. Sprinkle with Tajin seasoning and fresh chopped cilantro.

7. Serve with Grilled Creole Corn on the Cob.

8. Yield: 1 serving.
