No Sugar Added BBQ Bacon Meatloaf
Ingredients
- 2 tbsp canola oil
- 1 cup white onion, small diced
- 1/2 cup celery, small diced
- 2 tbsp chopped garlic
- 1 tsp dried oregano
- 1 tsp chili powder
- 2 lbs ground beef
- 1/2 cup shredded asiago cheese
- 1/2 cup grated Parmesan
- 2 eggs
- 1 tbsp low-sodium soy sauce
- Kosher salt and freshly ground black pepper, to taste
- 2 cups Ray's No Sugar Added Original BBQ Sauce (RY4423HA)
- 6 strips bacon
Directions
- Preheat oven to 400 F.
- In skillet over medium heat, heat oil. Add onion and celery and cook until translucent.
- Add garlic, oregano, and chili powder and cook until fragrant, 1 minute. Let mixture cool slightly.
- In a large bowl, combine ground beef, vegetable mixture, cheeses, eggs, soy sauce, and season with salt and pepper. Shape into a large loaf in baking dish, brush with No Sugar Added Original BBQ Sauce (RY4423HA), then lay bacon slices on top.
- Cook until bacon is crispy and beef is to 165 F.
- If bacon is cooking too quickly, cover dish with foil.
- Remove from oven and let rest for 10 minutes before slicing.
- Cut and serve with additional No Sugar Added Original BBQ Sauce (RY4423HA).
