No Sugar Added Original Barbecue Pulled Pork Stuffed Zucchini

Ingredients

  • 3 each zucchini, halved lengthwise
  • 2 tbsp extra-virgin olive oil, divided
  • Kosher salt and freshly ground black pepper, to taste
  • 1/2 white onion, chopped
  • 2 cloves garlic, minced
  • 1 lb cooked pulled pork
  • 2 cups Ray's No Sugar Added Original Barbecue Sauce (RY4423HA)
  • 1/2 cup black beans
  • 1/2 cup tomatoes, diced
  • 1/2 cup corn, roasted
  • 1 cup shredded cheddar
  • 1 cup shredded Monterey jack
  • 2 tbsp freshly chopped cilantro

Directions

  1. Preheat oven to 400 F.
  2. Scoop out insides of zucchini, reserving them for later. Place zucchini halves cut side-up into bottom of a sheet pan, season with salt and pepper.
  3. Bake until zucchini begins to soften, remove from oven.
  4. Heat oil in large skillet. Add onion and reserved zucchini and cook until onion is translucent.
  5. Add garlic and cook until fragrant.
  6. Add pulled pork and No Sugar Added Original BBQ Sauce (RY4423HA) and heat through.
  7. Stir in black beans, cherry tomatoes, and corn.
  8. Spoon pork mixture into zucchini then top with cheeses. Bake until zucchini is just tender and cheeses are melted.
  9. Garnish with cilantro before serving.
