Salmon Burgers with Avocado and Honey Mustard
Ingredients
- 1 1/4 lbs boneless skinless salmon fillets, cut into 1-inch cubes
- 1/4 cup red onion, minced
- 1/4 cup fresh dill, finely chopped
- 1 tbsp honey
- 1 tsp prepared horseradish
- Kosher salt and freshly ground black pepper, to taste
- 2 tbsp extra-virgin olive oil
- 4 brioche rolls, toasted
- 4 leaves Boston lettuce
- 4 red onion slices, 1/4 inch thick
- 1 ripe Hass avocado, sliced
- 1 cup Honey Mustard Dipping Sauce (SJ5032HA)
Directions
- Place salmon in a food processor and pulse until finely chopped. Transfer to a large bowl.
- Add the minced onion, dill, honey, and horseradish to the salmon and mix.
- Form into 4 patties. Season with salt and pepper and set aside.
- Heat the oil in a 12 inch skillet on medium heat until shimmering. Add the patties and cooked until browned, about 2 minutes. Flip and cook until the burgers are cooked through.
- Transfer to a paper towel lined tray and allow to rest for 2 minutes.
- Divide lettuce and onion between the 4 bottom buns and place a salmon patty on top of each.
- Spoon Honey Mustard Dipping Sauce (SJ5032HA) over them, then top with avocado and top bun. Serve immediately.
