Southwest BBQ Chicken Salad

Mixed greens tossed with Ken's Honey Lime Dressing, topped with honey roasted pecans, chopped bacon, cheddar-jack cheese, black bean-corn-salsa, tortilla strips and Citrus Chipotle Barbecue grilled chicken.


6 oz Mixed salad greens

2 fl-oz Ken's Honey Lime Dressing

1 Tbsp Honey roasted pecan, pieces

1 fl-oz Bacon, cooked, chopped

2 fl-oz Cheddar-Jack cheese, shredded

½ each Avocado, sliced

2 fl-oz Tri-Color Tortilla Strips

4 oz Sweet Baby Ray's Citrus Chipotle Barbecue Sauce

2 fl-oz Black bean-corn-salsa


1. In large mixing bowl toss greens, pecans and bacon with Ken's Honey Lime Dressing.

2. Remove from mixing bowl to center of plate and sprinkle with cheese and tortilla strips.

3. Finish on top with layers of avocado, bbq chicken and bean-corn-salsa.
